Tis the season for baking...Irish brown soda bread




Today Mommy was craving a bit of Ireland, so she decided to make the one food that she ate every day every time she has been to Ireland...brown soda bread. Benjamin got to help as it is a bit of a lesson in heritage for him as he has an Irish grandmother.

The simplest bread to make (flour, buttermilk, baking soda, oats, and salt), soda bread is a daily staple in Ireland where it is eaten with a lot of soups and stews as a hearty dipping bread. Being very versatile it is also eaten with breakfast, toasted to perfection and topped with butter or jam (Benjamin and Mommy love having it for breakfast). Yummy!

Benjamin helped to stir the ingredients together (a lot of messy fun!)and when our soda bread was all done...he helped to eat it! What a deliciously fun morning activity! For your own fun with soda bread see the recipe below.

Recipe: Brown Soda Bread
4 cups whole wheat flour
1 cup all purpose flour
1/2 cup rolled oats
1 teaspoon salt
1 teaspoon baking soda
2 1/2 cups buttermilk

Preheat oven to 425 degrees.
Stir together all ingredients except buttermilk.
Stir in buttermilk until a soft dough forms (it will be a little sticky!)
Knead the dough lightly (I just sort of mash it around in my hands)
Divide the dough into two peices and form into oval shaped 2 inch thick loaves.
Place on lightly greased cookie sheets.
Bake for 30-45 minutes.
